Stir things up—add whole leaf spinach to traditional tomato soup.

Ingredients

  • 1 Tbs olive oil
  • 2 cloves garlic, chopped finely
  • 1 lb fresh spinach, chopped or whole
  • 1 28 oz can tomato sauce
  • 1 28 oz can chopped tomatoes
  • 1 quart vegetable broth (or chicken stock)
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp dried marjoram
  • 1/2 cup cream

Directions

  • Preheat a large soup pot. Add olive oil and then add garlic. Saut over medium-low heat, being careful not to burn, for 23 minutes.
  • Add all ingredients to the pot. Bring to a boil and simmer for 2030 minutes.
  • Add cream and heat through, but don't boil again.
  • Serve with grilled cheese or crackers.
