Spinach Chicken Cheesy Pasta

Ingredients
- 1 package tri-color spiral pasta
- 2 Tbs olive oil (more if needed)
- 2 boneless, skinless chicken breasts
- 1/2 sweet onion, chopped
- 1 cup sliced fresh mushrooms
- 1 lb fresh spinach
- 2 cloves garlic, grated
- 1 lb tomatoes (grape, cherry, or Roma)
- 2 Tbs butter
- 2 Tbs flour
- 2 cups milk
- 1/4 cup grated Parmesan cheese
- 1 cup Italian blend cheese (or mozzarella cheese)
- Salt and pepper to taste
Directions
- Preheat skillet. Prepare pasta according to package directions. Drizzle pan with olive oil. Salt and pepper chicken.
- Brown chicken breasts on both sides over medium heat. Remove from pan.
- Add more olive oil if necessary. Add chopped onions, mushrooms, and kosher salt and saut until soft.
- Add spinach (you may have to do this a little at a time) and wilt. Add garlic and a little kosher salt to vegetables.
- Drain pasta and put in a large bowl. Remove cooked vegetables from the pan and add to pasta in the large bowl.
- Quarter Roma tomatoes or halve cherry or grape tomatoes. Add tomatoes to pasta bowl.
- Turn heat to low. Add butter to pan and melt, whisk in flour, and cook for 23 minutes. Add milk and bring to a bubble over medium heat. Sauce will thicken.
- When sauce is thick and bubbly, remove from heat and melt in cheeses. Add sauce to pasta bowl and toss to coat.
