A soul-satisfying soup with ground beef, black beans, and noodles.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 1/2 Tbs chili powder
  • 1 Tbs cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/8 tsp cayenne pepper, optional
  • 1 15 oz can diced tomatoes, not drained
  • 4 cups beef stock
  • 1 15 oz can black beans, drained and rinsed
  • 1 1/2 cups elbow macaroni
  • Optional Garnishes Shredded cheese
  • Sour cream

Directions

  • In a stock pot, brown ground beef with onion, green bell pepper, and seasonings.
  • Stir in tomatoes, beef stock, and black beans. Cover and simmer for about 10 to 15 minutes just to let the flavors develop. (You can simmer all day at this point, if you want.)
  • Bring soup to a boil and stir in macaroni. Return soup to a boil. Cover, reduce heat, and simmer until noodles are tender, about 20 minutes.
