Honey Garlic Ginger Stir Fry

Ingredients
- 1 pinch kosher salt, or to taste
- 1 pinch pepper, or to taste
- 2 boneless, skinless chicken breasts, chopped
- 2 Tbs olive oil
- 1 1/2 cups fresh shiitake mushrooms, sliced
- 7 baby bok choy (or 1 large bok choy), chopped
- 1 Tbs freshly grated ginger
- 2 cloves garlic, grated
- 2 Tbs honey
- 1 cup dry white wine
Directions
- Preheat skillet. Salt and pepper chopped chicken. Drizzle pan with olive oil.
- Add chicken to preheated pan. Saut until browned on each side.
- Add mushrooms, bok choy, ginger, garlic, honey, and wine.
- Cook over medium heat until mushrooms are tender. Serve over steamed rice.
