Catfish, especially farm-raised catfish, is incredibly tender and fries up quickly.

Ingredients

  • 1/4 cup oil for frying
  • 1 cup flour
  • 1 cup finely ground cornmeal
  • 3 Tbs Southern spice blend (Cajun seasoning works well)
  • 4 catfish fillets

Directions

  • Preheat oil to 375F. It will be a little higher than medium on the stove.
  • Mix together flour, cornmeal, and spices.
  • Bread catfish and fry until firm. Don't overcook, because then it will be tough and rubbery.
  • Serve with a simple cocktail or tartar sauce.
