Southern Fried Catfish

Ingredients
- 1/4 cup oil for frying
- 1 cup flour
- 1 cup finely ground cornmeal
- 3 Tbs Southern spice blend (Cajun seasoning works well)
- 4 catfish fillets
Directions
- Preheat oil to 375F. It will be a little higher than medium on the stove.
- Mix together flour, cornmeal, and spices.
- Bread catfish and fry until firm. Don't overcook, because then it will be tough and rubbery.
- Serve with a simple cocktail or tartar sauce.
