Completely addictive shrimp tostadas—double the recipe if you're really hungry.

Ingredients

  • Avocado Salsa2 tomatoes, diced
  • 1/2 onion, diced
  • 3 Tbs freshly chopped cilantro
  • 2 avocados, diced
  • 1 lime, juiced
  • 1 pinch kosher salt
  • Refried Beans1 Tbs olive oil
  • 1 can refried beans
  • 1/4 tsp smoked paprika
  • 1/4 tsp cumin
  • 1 pinch kosher salt
  • 1/4 tsp dried oregano
  • 1/4 tsp dried cilantro
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 cup water
  • Shrimp1 lb peeled and deveined fresh shrimp, tails removed
  • 1/4 tsp smoked paprika
  • 1/4 tsp cumin
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp garlic powder
  • 1 pinch kosher salt
  • 1 Tbs olive oil
  • 1 lime, juiced
  • 8 pre-made tostadas
  • 1 cup Mexican blend shredded cheese

Directions

  • Avocado SalsaCombine all ingredients in a mixing bowl and mix well, set aside.
  • Refried BeansPreheat sauce pan. Drizzle with olive oil and add refried beans. Add spices and water.
  • Mix well and bring to a boil. Reduce to a simmer and simmer until beans have thickened again.
  • ShrimpCombine cleaned, peeled, and deveined shrimp (remove the shrimp tails if you like) with spices and lime juice. Toss well.
  • Preheat skillet. Drizzle with olive oil. Saut shrimp over medium heat until they are pink.
  • To AssembleSpread refried beans over tostada. Sprinkle with shredded cheese.
  • Top with shrimp and avocado salsa. Serve and enjoy!
