Ingredients

  • 2 cups whole wheat flour
  • 2 1/2 cups white flour
  • 2 1/2 cups sugar
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup shredded coconut
  • 1 cup raisins
  • 2 apples, peeled and grated
  • 4 carrots, peeled and grated
  • 1 15 oz can crushed pineapple, drained
  • 1 cup mandarin oranges, drained
  • 6 eggs
  • 1 1/2 cups applesauce
  • 1/2 cup vegetable or canola oil
  • 2 tsp vanilla
  • Coarse sugar (optional)

Directions

  • Stir together the flours, sugar, cinnamon, nutmeg, ginger, baking soda, baking powder, and salt in a medium-sized bowl. Set aside.
  • In a large bowl, combine the remaining ingredients and stir to blend well. Slowly add in the dry ingredients until fully incorporated.
  • Fill greased muffin tins 3/4 full. If desired, sprinkle coarse sugar on top of the muffins. Bake at 350F for 30 to 35 minutes.
